History and tradition
They are called Maritati because they represent marriage, the union, between the Orecchiette and Maccheroni, which are the main shapes of Salento. Ideal in the kitchen for the preparation of first courses of vegetables, tomato sauces with or without meat (stew, meatballs or pork chops), combined with shaved salt ricotta.
