History and tradition
They have dome shape with a thinner center than the edge and the rough surface. In reference to the realization of the Orecchiette, it was born the term "strascinati"(dragged), synonymous used to indicate the realization of this kind of pasta. The use of tomatoes and spinach recalls the typical Mediterranean flavors and the entirely italian origin of the product. Ideal in the kitchen for the preparation of first courses of vegetables (orecchiette with greens turnip), of simple tomato sauces combined with Salento's traditional strong sheep's ricotta, or with meat sauce, stew, meatballs, chops.
