History and tradition
Sagne ncannulate represent the symbol of the tradition of Salento, and are better recognized in the rest of Italy as ritorne noodles. Legend has it that their particular form derived from chippings coming out of the plane of St. Joseph. Their rough surface allows you to hold the sauce and are usually flavored with tomato sauce or pork meat sauce combined with ricotta, salted ricotta and pecorino cheese.
